Growing up in the state of Georgia, I have great pride in being called a Georgia Peach! I mean after all I lived 15.86 miles as the crow flies, or 17.50 by car, from the Lane Peach Orchard in Fort Valley, Georgia. If you are from Georgia, it’s just a given … you love peaches. Peach cobbler, peach pie but first and foremost and MOSTEST of all Peach Ice Cream. So today, after making the one thousandth (at least) declaration to go on a diet … again … it was very difficult to say no to the offer of homemade peach ice cream.
Heres the conundrum … when I crawled out of bed at seven a.m. with my ring so tight on my finger that I couldn’t get it off … I said, “That’s it! When the rings no longer fit, it’s time to go on a diet!” (Not a problem the pants are tight! but the rings .. can’t have that!)
With today being Sunday, I went to church and our church offers complimentary donuts and coffee every week. I ALWAYS walk by those donuts every Sunday, never once looking back as if they are calling my name. Today … where’s the donuts?! As fate would have it, there were none left. Whew!
Lunchtime … head to Wendy’s where I had a great salad with minimal dressing added. Guess what … for a limited time only … Frosty’s 50 cents. So I opted for the half salad portion size, instead of the full size, with water and caved in and got the Frosty.
Supper … feeling guilty for eating the Frosty, I ate another salad of lettuce, fresh tomatoes from my neighbors garden, feta cheese crumbles and sautéed chicken breast …. all because …. wait for it …. wait for it …. so I could have ice cream again. But not just any old ice cream. I mean if it had been any old ice cream I could have resisted the temptation. This was peach ice cream and since when have you ever seen a Georgia peach turn down home made peach ice cream? Um … like never!
And so today I started a new diet … again … I’m calling it my tongue in cheek ~ “Eat Salad So You Can Have Ice Cream For Dessert Diet” aka The Georgia Peach Ice Cream Diet. Who needs paleo or Whole30? There is no sugar or milk on those diets … trust me I know because I’ve done both with minimal success. So here goes! Here’s to Peach Ice Cream!
No Cook Homemade Peach Ice Cream
Ingredients: 4 large eggs, 2 1/2 cups sugar, 1/2 tsp salt, 4 cups whole milk, 4 cups heavy whipping cream, 2 Tablespoons vanilla extract
Recipe: Beat eggs til foamy, gradually add sugar and salt til thickened, then add the cream, milk and vanilla extract and mix thoroughly. Chill the mixture in the refrigerator a minimum of one hour but preferably overnight. When mixture is chilled, add 2 cups well ripened peaches cut in bite size pieces. Churn in ice cream freezer until frozen.
And if you ever hear me say something is better than peach ice cream, then that’s a compliment because there are very few things better than peach ice cream! Enjoy and to heck with the diet! I’ll start over tomorrow!
